khai khem (khai phok)
Khai khem or khai phok are salted eggs, usually ducks' eggs, that are either daubed with soil of clay and lime, (marl), as in khai khem din so phong, or daubed in ashes or in a mixture of chaff and (iodized) salt, as in khai phok khem.
