Khao ho bai bua is a traditional dish of cooked or fried rice mixed with some ingredients, including pork, dried shrimp, sliced kun chiang, and shiitake, wrapped in a lotus leaf and steamed in a kheng, thus transferring the fragrance of the leaf onto the rice, giving it its special aroma.

 

Ingredients can vary and besides some spices often include shrimps, shredded pork, sliced sweet Chinese sausage and a shiitake mushroom. Sometimes also cooked lotus seeds (fig.) are added.
