sweet chili sauce

Name of a savory syrup-like sauce, typically used as a dip sauce for spring rolls, dumplings, etc. This sauce is rather viscous, transparent and orangey in colour, and always has parts of red chilies, such as pits and skin, floating in it. It is generally made with rice wine vinegar, sugar and red, heart-shaped chili peppers, i.e. sweet peppers, which are also known as cherry peppers or pimiento peppers and strongly resemble red bell peppers. Sometimes, also fish sauce and garlic is added. Sweet chili sauce is sometimes spelled sweet chilli sauce and is also known as Thai sweet chili sauce. In Thailand, it is called sot phrik wahn (ซอสพริกหวาน).
